“Turkish” Chicken

Recipe time!  I made this for dinner tonight and it was SO good!

  • 1 lb chicken breast tenders
  • 1/2 cup apricot preserves (I used apricot-pineapple)
  • 2 tsp garlic powder
  • 2 tsp cinnamon
  • 2 tsp paprika
  • 2 tsp salt
  • 2 tsp black pepper

Put a medium skillet over medium heat and add the apricot preserves.  Let them warm in the pan for a few minutes while you mix all of the spices together.  Sprinkle half of the spice mixture over one side of the chicken and place in the pan spice-side down.  Cook until lightly brown, five to seven minutes.

Sprinkle the other half of the spices over the chicken and flip in the pan, dragging them through the apricot a little as you put them back down.  Cook for another five to ten minutes or until the chicken is fully cooked throughout.

I made only two servings with this because I was hungry!  So if you served it with rice or pasta you could make three or four servings out of it.

Weight Watchers Points (for half the chicken): 8
